We spent years behind the bar making these one at a time. Then we worked out how to put them in a bottle without losing anything.

bar to
the bottle
Originated from BAR 1661 in the heart of Dublin 7.
2019
BAR 1661 opens on Green Street
A Dublin 7 cocktail bar built around poitín and precision. It goes on to be named Ireland's Best Cocktail Bar.
2020
The doors shut, the bottling starts
With the bar closed, we started batching our serves properly, real juice, real spirits, no shortcuts, and sending them out across Ireland.
2021
Best Drinks at the Irish Made Awards
Followed by Innovator of the Year at the Food & Wine Awards. Nice, but the real test is still the one across the bar.
Now
Thirteen flavours, still made in Ireland
Stocked in independents and hotels nationwide, poured at weddings, and sitting in a lot of Irish fridges.

No watering

Dilution is calculated per recipe, so a serve out of the bottle tastes like a serve off the bar.
